The wine list at Nous features an extensive collection of Alsatian staples, unique alpine wines, and local favorites. As sommelier, Molly Shaughnessy focuses on sustainability and quality when selecting wines for the list. She recognizes that wines need to appeal to a wide range of people, and therefore, she seeks wines of great variety as well as price points. She curates the list to encourage guests to try new wines with her expert guidance, but also keeps the list user-friendly by listing sugar content and labeling by color or type of wine (still or sparkling).
The beer program at Nous features selected German beers on draft and in bottle. Molly has also selected unique styles of beer like Flanders Red Ale and a gluten free dubbel from Belgium.
Molly Shaughnessy has had a passion for food and beverage all her life. When she started working at Amuse Restaurant in 2010 while attending college at Southern Oregon University, she knew this was the industry she was born for. She got married in 2013 and had the incredible opportunity to move to Germany, an experience which changed her life and perspective on cuisine, wine (and beer!), and hospitality. After living in Bavaria for two years, she knew that she needed to get back to the industry. In 2018 she moved back to Ashland and dove into the beverage education rabbit hole. She became a Certified Sommelier through the Court of Master Sommeliers, America in October of 2020 and a Certified Cicerone® in 2023. She is now pursuing the Wine and Spirit Education Trust (WSET) spirits course at level 3 (the highest spirits certification available).
Beyond her passion for beverages, after spending more than a decade working in the industry, Molly is motivated to change the stigma and promote mental and physical health among restaurant workers. She sees how the current mentality among restaurant employees will not be sustainable for the industry and is actively finding ways to foster a positive environment and save the industry.
